Turkey Lettuce Wraps


The Sofrito

  • 1 Green Bell Pepper
  • 1 Large Tomato
  • 1 Small Onion, or ½ Large Onion
  • 4 or 5 Cloves Garlic
  • ½ Bunch of Cilantro
  • ¼ Bunch of Parsley

Blend all ingredients in a blender or food processor into a fine paste


The Sauce

  • Plain Yogurt, Greek or Mediterranean if you can find it
  • 1 Clove Finely Minced or Pressed Garlic
  • 1 Tsp. Lemon Zest
  • Juice of ½ Lemon
  • 1 Tsp. Dried Dill
  • Salt and Pepper

Combine all ingredients, mix well, and season to taste


The Wraps

  • Ground Turkey
  • Head of Butter Lettuce
  • Diced Yellow Bell Pepper
  • Diced Carrot
  • Bean Sprouts
  • Chopped Cilantro
  • Finely Diced Serrano Chile (Optional)
  • Thai Chili Paste (Optional)
  • The Sofrito (Above)
  • The Sauce (Above)
  • Salt and Pepper

In a pan over medium heat cook the ground turkey, carrots and 2 tablespoons of the sofrito stirring occasionally. Once the turkey is completely cooked, stir in the bell pepper and continue to cook for 2 minutes. Remove from the heat and allow the mixture to cool slightly.

To assemble the wraps top a leaf of the butter lettuce with ¼ cup of the turkey mixture, some of the bean sprouts, a pinch of cilantro and some of the Serrano chilies if desired. Top with a drizzle of the sauce and a drizzle of the thai chili paste
